Pork with fermented bamboo shoot, dry fermented soyabeans (axone) and dry king chilli, a pork curry combination made in HEAVEN, using the holy trinity of northeastern flavours, fermented bamboo shoot, fermented axone or soyabeans and dry king chilli.
Ingredients needed:
- fresh pork 500 grams, cut into cubes
- ginger, garlic paste (roughly mashed) 2 teaspoons
- 1 dry king chilli or can use regular chillies as per taste (buy here)
- fermented bamboo shoot, about 100 grams cut into thin strips (buy here)
- dry fermented soyabean (axone), 2-3 tablespoons (buy here)
- salt to taste
How to cook:
- In a thick bottomed pot, add only the fat pieces to extract the oils,
- Add the meat pieces and fry till the meat has browned well
- Add enough water to cover the meat. Cover and let it cook while stirring occasionally, till most of the water has dried and the meat is soft.
- Add the ginger garlic paste and dry king chilli and cover again to cook
- (optional) After a few minutes, remove the dry king chilli and mash it in a mortar and pestle and add back to the pot
- Add the fermented bamboo strips and dry axone. Mix well and stir-fry for a few minutes, letting all the delicious aromas integrate
