If you’re craving a smoky, savoury stir fry loaded with rich pork, earthy mushrooms, and vibrant veggies, this dish is a must-try! The deep umami from soy sauce paired with the smoky richness of pork makes this stir-fry irresistible. Serve it over hot steamed rice or noodles for a quick, comforting meal.

Ingredients:

  • 250 g smoked pork (cut into cubes, separate fat and lean meat)
  • 1 cup mushrooms (shiitake, button, or oyster – sliced), using oyster mushrooms here
  • 2 medium carrots
  • ChoppedBell peppers (red & green, julienned) – optional
  • 1 large onion, sliced3–4 garlic cloves, minced1-inch piece ginger
  • Minced2 tbsp dark soy sauceSalt and fresh chillies, to taste
  • Spring onions or fresh coriander (dhaniya) – chopped, for garnish

Instructions:

  • Heat a wok or large pan over medium-high heat
  • Add the fat pieces of the smoked pork and let them render until enough oil is released.
  • Once the oil is hot and aromatic, add onion, garlic, ginger, and chillies.
  • Stir-fry for 2–3 minutes until fragrant.
  • Add the lean meat pieces of the smoked pork.
  • Stir-fry until they start turning slightly crispy on the edges.
  • Toss in the mushrooms and vegetables. Stir-fry for a few minutes until the veggies are tender yet still crisp.
  • Add soy sauce and mix everything well, coating all ingredients evenly.
  • Turn off the heat and finish with a sprinkle of chopped spring onions or dhaniya.

Best enjoyed with steamed rice or stir-fried noodles. The contrast of smoky meat, tender mushrooms, and crunchy veggies makes this dish a flavourful, texture-rich treat.
