The best way to include black sesame seeds (neiiong) into dishes is to dry roast the seeds in a pan, let it cool and then grind into a paste.
Here’s how to make the famous Pork with Black Sesame:
Ingredients:
- 1/2kg fresh pork, cut into medium-sized pieces
- 1 medium onion, chopped
- 1 tbsp of ginger, grated
- 1 tbsp garlic, minced
- 2 tbsp black sesame seeds paste (buy here)
- 1 tsp Lakadong turmeric (buy here)
- 4 tbsp mustard oil (or any vegetable oil)
- Water and Salt, to taste
Directions:
- Add the pork into a pot along with salt to taste and sauté for 3-4 minutes, or until browned.
- Add about 2 cups of water and leave it to simmer until the meat softens.
- In a separate pan or wok, heat the oil.
- Add the ginger and garlic and cook until softened.
- Add the turmeric and season with salt. Mix it well.
- Add the pork along with the meat stock into the pan. Stir well and leave it over medium heat for about 10 minutes.
- Add the black sesame seeds paste to the pork and leave it to simmer for 2-3 minutes.
